ClickUp allows for choosing colors of task groups, status colors, etc. Trello has color options for Card Covers and labels & changeable backgrounds. Milanote is maybe the most customizable here, with the ability to add colors to lots of different things, most custom, but some are not. Zenkit allows task background color options, but I don't know if you have to choose from a group or punch in a hex code for the exact color you want.
Trello can allow custom fields on the free plan, but only if you have a PowerUp available (& you only have access to 1 at a time, per board on the free plan). Milanote is completely custom. Airtable works like a customizable spreadsheet so this is an easy feature here. ClickUp and Asana may only allow this on paid plans (Asana definitely does).
