Still bitter and acidic. I think I need to use more water.
Process
Water went into the espresso machine hot, but came out cold. I need to preheat all of the espresso components before pulling my shots, so that the machine will not steal heat from the water.
Stop using the small container that came with the Ooni scale. Just use the cup that came with the grinder for all measurements.
This shot had the most crema (relatively speaking), so I think not pre-infusing was one of my earlier problems
