This was awesome. The problem with it is that it was too sweet, and the ginger didn't quite come through. Meat could also likely be changed.

Roasted Green Beans
I added some guchujang, sugar, sesame oil, rice vinegar, soy sauce. This was a little bit too wet, next time I think I should stick to no vinegar, no soy sauce, and salt after. The other problem here is that it was too wet. I baked this in a casserole, but that doesn't allow enough water to evaporate. Instead, next time put it on the silicone baking mat on the rimmed baking sheet to allow more air circulation. This also forces it to be less wet. The green beans were thawed, and should have been

Everyone was very impressed with this dish. I think it lacked some seafood flavour, which likely could've been fixed with some dried shrimp and more fish sauce.

Adana Kebab
Big fan of these ground lamb kebabs! Could take even more spice than the recipe suggested I think. I tried to: * Pan fry * Sous vide * Oven (400F ~20m) I preferred the sous vide + oven-broiled ones, they were super moist and delicious. I think BBQ is the way to go here. Pan fry was more greasy, oven was more dry. People's favorite were the oven ones, followed by sous vide (quite different). Served this with home-made lavosh bread and the turkish shepher's salad.

Spice mixture for one entire chicken 2 tbsp sumac 2 tbsp aleppo pepper 1 tbsp salt 1 tbsp cinnamon 1 tbsp cumin 400F in oven on turbo grill until the interior of chicken was at 70c This was great.

800g overnight soaked chickpeas 40g garlic Juice from 1 lemon (60g) 150g red onion (3/4) 1 cup fresh parsley 2 tbsp cumin 2 tbsp aleppo pepper 2 tbsp of greek oregano 1 tbsp salt 1 tbsp msg In the blendtec. Pretty hard to blend. Had to do it in small batches :( Shallow fried them. Turned out super delicious. Want to give oven a try for more healthya lternative.

Bunch of garlic scapes Beets Pistachios Sautéed all the greens with garlic scapes. Beets endured an hour in the oven in alu foil, then snapped in pieces. Topped with some yogurt with ground toasted coriander and cumin, sumac and aleppo. Salt and pistachio added, and generous olive oil used throughout cooking. DOEP
